Almond Flour Banana Bread
Ingredients:
3 cups blanched Almond flour
2 Tbsp.arrowroot flour
1 tsp. Baking powder
1 tsp. Baking soda
1 Tbsp. ground cinnamon
tsp. Salt
3 eggs
1 Tbsp. Vanilla extract
3 or 4 ( 1 cup) very ripe bananas, mashed
cup date paste or cup maple syrup
Coconut oil

Directions:
Preheat the oven to 350 degrees F.
Prepare a 9 x 5 inch loaf pan by rubbing coconut oil on the sides of the pan. Lay a piece of parchment paper in the pan with the sides overhanging a couple of inches to be used to lift the bread out of the pan.

In a large mixing bowl combine the almond flour, arrowroot, baking powder, baking soda, cinnamon and salt with a whisk until everything is evenly distributed.

In a smaller bowl combine the wet ingredients: egg, vanilla, and date paste with a whisk. Pour the wet ingredients into the dry ingredients and stir until almost combined. Add the mashed bananas and stir until just combined. Do not over mix.

Pour the banana bread batter into the pan and smooth it out with a spatula. Place the bread into the center of the oven and bake for 50 minutes. I like to check for doneness at 45 minutes with a toothpick inserted in the center of the bread. If it comes out clean, it is done.

Let the bread cool for 10 minutes before removing from the pan. Use the parchment paper to lift the bread out. Slice a piece and add a little slice of butter which will melt and taste yummy on the warm bread. Enjoy!
