Chicken Cordon Bleu Recipe
Ingredients:
2 chicken breast, boneless, skinless,
4 slices swiss cheese
4 slices of sliced ham
cup Aleias Gluten Free bread crumbs
1 Tbsp. Bobs Red Mill 1 to 1 baking flour, gluten free
1 egg
2 tsp. Milk
cup butter, chilled so you can slice thin pieces
Salt
Garlic powder

Directions:
Preheat oven to 425 degrees F.

Butterfly the chicken breast into 4 horizontal cuts (pieces) then lay a piece of plastic wrap on top of the breasts and pound with a meat tenderizer until they are inch thick. Season with salt and garlic powder.

Slice cheese into inch wide strips and trim the ends so that when it is placed in the middle of the ham slice, you can roll it like a burrito making sure the ends of the ham are folded in so the cheese cannot leak out as it melts.

Place each ham roll at one end of the chicken breast and roll it up. I found that I didnt need a toothpick to hold it closed but you can if you wish.
Set up the dredging station: 1 bowl with the egg and milk whisked to combine, and the 2nd bowl with the bread crumbs and flour mixed to combine.

Dip each chicken roll into the egg wash first coating all and then dipping each roll into the bread crumb mixture, spooning the crumbs over and making sure to fully coat each roll.

Place the chicken rolls on a parchment paper covered baking sheet and salt lightly with salt and garlic powder. The add very thin slices of cold butter on top of each roll. This will ensure the chicken browns up nicely and gets crispy.

Bake in a 425 degree F. oven for approximately 25 minutes. Its difficult to use an instant read thermometer as the chicken is rolled with ham and cheese inside of it but you can try. I found that 25 minutes was perfect. You can always cut into one if you wish.
Serve with some potatoes, and grilled asparagus for a delicious easy meal!
