Almond extract2 Tbsp. butter, melted cup Gluten free flour, or regular flour5 Tbps. fresh lemon juiceZest from 2 to 3 lemons1 cup whole milk or milk alternativePinch of salt2 tsp. Butter, softened tsp. Cream of tartar cup of toasted sliced almondsDirections:Preheat oven to 350 degrees F.Prepare an 8 x 8 oven proof dish by rubbing 2 tsp. butter to coat the bottom and sides of the pan.Separate the egg yolks from the egg whites and place in two bowls and set aside.Place the maple syrup in a large mixing bowl along with the melted butter and mix with a hand mixer until combined. Add in the egg yolks and mix for one minute on medium speed.Place the flour in a sifter or strainer and shake a little at a time into the mixing bowl and mix with the beaters after each addition. Then add the lemon zest from 2 to 3 lemons along with the lemon juice. Mix again with the hand mixer until combined.Add the almond extract, milk and a pinch of salt and mix again. Bring over the bowl with the egg whites and begin mixing with clean beaters. After 20 seconds add the cream of tartar by sprinkling in some and mixing. Then sprinkle some more mixing again. Continue to beat with the hand mixer until stiff peaks form, about 4 to 5 minutes. Add of the egg whites to the mixing bowl and use the hand mixer to mix it in. Then add the rest of the egg whites and fold them in with a spatula. Be gentle and once the whites are incorporated, pour the batter into the prepared 8 x 8 dish you coated with butter. Bake at 350 degrees F. for 35 minutes. Sprinkle the almonds over the top. Let cool for 10 -15 minutes before serving. This can be served hot or cold.
