Yummy mutton gets the delicious flavours of Andhra with this recipe.ANDHRA MUTTON CURRY Ingredients750 grams mutton, cut into 1 inch pieces on the boneSalt to taste¼ teaspoon turmeric powder1 teaspoon coriander seeds1 teaspoon cumin seeds (jeera)½ teaspoon fennel seeds (saunf)6-8 black peppercorns4-5 cloves 1 inch cinnamon3 green cardamoms1 teaspoon poppy seeds (khus khus)4 tablespoons oil10-12 curry leaves1 teaspoon ginger-garlic paste2 large onions, chopped1 large tomato, chopped1 teaspoon red chilli powder1 teaspoon black pepper powder 2 tablespoons chopped fresh coriander leaves + for garnishing Method1. Pressure cook mutton pieces with salt, turmeric powder and sufficient water till the pressure is released 6-7 times. Open the lid when the pressure reduces completely. 2. Dry roast coriander seeds, cumin seeds, fennel seeds, peppercorns, cloves, cinnamon, cardamoms and poppy seedstill fragrant. Remove from heat, cool and grind to a fine powder. 3. Heat oil in a deep non-stick pan. Add curry leaves, ginger-garlic paste and onions, mix and sauté till onions are well browned. 4. Add tomato and mix well. Add salt, mix and cook till the tomatoes turn soft. 5. Add chilli powder, pepper powder and prepared spice powder, mix well and cook till the oil starts to leave the sides of the pan. 6. Add the cooked mutton with the cooking liquor and coriander leaves and mix well. Simmer till the mutton is fully cooked. 7. Garnish with coriander leaves and serve hot.
