Drizzle the apples with lemon juice to prevent them from turning brown. Give this a stir.Next slice the banana into the pan and place the pan on the stove over medium low heat. Add a little water to the pan, say 1/3 cup and the cinnamon.Mash and stir the mixture until the banana is mashed. Cover and cook this for 5 to 6 minutes stirring occasionally. Take the banana/apple mixture off the stove and let it cool for 5 minutes. Then divide the mixture evenly into two mason jars.In another bowl, combine the quarters of the coconut milk and the protein powder with a whisk to prevent any lumps from forming. I didnt use the whole can as I wasnt sure it would all fit into the mason jars.Pour half of the protein/coconut milk mixture into each mason jar and top off each jar with the remainder of leftover coconut milk to fill the mason jar about 1 inch from the top.Add 2 Tbsp of chia seeds to each mason jar and stir to combine. Place the lids on top and place in the refrigerator for at least 1 hour or overnight to thicken up.This pudding can be served warm or cold and it also makes a wonderful dessert.
