Arabic Mutton Majboos #HappyCookingToYou #FoodFusionWritten Recipe: https://bit.ly/3udJHViVisit Our Website: https://www.foodfusion.com Download iOS & Android app: https://www.foodfusion.com/app Facebook: https://facebook.com/foodfusionpk Instagram: https://instagram.com/foodfusionpk Twitter: https://twitter.com/foodfusionpk Also follow @Healthy Fusion & @Food Fusion Kids for healthy food & kids' special recipes.00:00 Arabic Mutton Majboos00:18 Prepare Mutton majboos02:11 Prepare Rice02:34 Prepare Chana daal03:04 Aray waahServes 6-8 Recipe in English:Ingredients:-Cooking oil Cup-Pyaz (Onion) chopped 2 medium-Darchini (Cinnamon sticks) 2-Sabut kali mirch (Black peppercorns) tsp -Badiyan ka phool (Star anise) 1-Hari elaichi (Green cardamom) 2-Dried lemons 2-Tez patta (Bay leaves) 2-Adrak lehsan paste (Ginger garlic paste) 1 & tbs-Tomato paste 2 tbs-Namak (Salt) 1 & tsp or to taste-Curry powder 1 tbs-Zeera powder (Cumin powder) 1 & tsp-Haldi powder (Turmeric powder) tsp-Dhania powder (Coriander powder) 1 & tsp-Tamatar (Tomatoes) pureed 1 & Cup-Whole mutton leg 1 kg approx. -Water 1 & litre or as required-Kali mirch powder (Black pepper powder) tsp-Paprika powder 1 & tsp-Zeera powder (Cumin powder) tsp-Cooking oil 2-3 tbs-Chawal (Rice) Sella 650g (soaked for 1 hour)-Cooking oil 2-3 tbs-Pyaz (Onion) chopped 1 medium-Chana daal (Split bengal gram) 1 Cup (boiled with salt)-Haldi powder (Turmeric powder) tsp-Elaichi powder (Cardamom powder) tsp (optional)-Curry powder 1 & tsp-Namak (Salt) tsp or to taste-Kishmish (Raisins) 3-4 Directions:-In a pot,add cooking oil,onion and saut until translucent.-Add cinnamon sticks,black peppercorns,star anise,green cardamom,dried lemons,bay leaves,mix well & cook for 1-2 minutes.-Add ginger garlic paste,tomato paste and mix well.-Add salt,curry powder,cumin powder,turmeric powder,coriander powder,tomato puree,mix well and cook for 4-5 minutes.-Add whole mutton leg,pour gravy masala on mutton leg properly & let it cook for 2-3 minutes.-Add water & bring it to boil (enough to dip whole mutton leg),cover & cook on low flame until tender (1 hour & 15 minutes). -Take out cooked whole mutton leg from pot & set aside.-In a bowl,add black pepper powder,paprika powder,cumin powder,cooking oil and mix well.-Apply prepared mixture on both sides of cooked whole mutton leg with the help of the brush. -In a pot,place steam rack,cover & preheat on medium flame for 5-10 minutes.-Place whole mutton leg,cover & pot bake on medium flame for 15 minutes.-In remaining mutton stock (cook on high flame to reduce it it 2 & Cups),add rice,mix well and cook on high flame for 2-3 minutes,cover and steam cook on low flame for 12-15 minutes.-In a frying pan,add cooking oil,onion and fry until light golden.-Add boiled split bengal gram,turmeric powder,cardamom powder,curry powder,salt,mix well and cook on medium flame for 2 minutes.-Add raisins,mix well & set aside.-On a serving platter,add & spread prepared rice,daal & raisins,mutton leg & garnish with green chillies & serve!Recipe in Urdu:Directions:-Pot mein cooking oil aur pyaz dal dein aur translucent hunay tak saut ker lein.-Darchini,sabut kali mirch,badiyan ka phool,hari elaichi,dried lemons aur tez patta dal ker ache tarhan mix karein aur 1-2 minutes kliya paka lein.-Adrak lehsan paste aur tomato paste dal ker ache tarhan mix ker lein.-Namak,curry powder,zeera powder,haldi powder,dhania powder aur tomato puree dal ker ache tarhan mix karein aur 4-5 minutes kliya paka lein.-Whole mutton leg dal dein,gravy masala ko mutton leg per ache tarhan dal dein aur 2-3 minutes kliya paka lein.-Pani dal ker ubal lein (enough to dip whole mutton leg) aur dhak ker halki ancch per gul janay tak paka lein tender (1 hour & 15 minutes). -Cooked whole mutton leg ko pot sa nikal ler side per rakh dein.-Bowl mein kali mirch powder,paprika powder,zeera powder aur cooking oil dal ker ache tarhan mix ker lein.-Tayyar mixture ko cooked mutton leg ki dono sides per brush ki madad sa laga lein.-Pot mein stream rack rakh dein aur dhak ker darmiyani ancch per 5-10 minutes kliya preheat ker lein.-Whole mutton leg rakh dein aur darmiyani ancch per 15 minutes kliya pot bake ker lein.-Remaining mutton yakhni (cook on high flame to reduce it it 2 & Cups) mein chawal dal ker ache tarhan mix karein aur tez ancch per 2-3 minutes kliya paka lein aur dhak ker halki ancch per 12-15 minutes kliya steam cook ker lein.-Frying pan mein cooking oil aur pyaz dal ker light golden ho janay tak fry ker lein.-Boiled chana daal,haldi powder,elaichi powder,curry powder aur namak dal ker ache tarhan mix karein aur darmiyani ancch per 2 minute kliya paka lein.-Kishmish dal ker ache tarhan mix karein & side per rakh dein.-Serving plate mein tayyar chawal,daal & raisins aur mutton leg dal dein aur hari mirch sa garnish ker ka serve karein!
