Chola masala powder is a spice blend widely used in chickpeas curry (Chola / Chana Masala curry) in Indian subcontinent. Whole spices of cinnamon, coriander seeds, cumin seeds,chili, cardamom pods etc are toasted in a pan to release their aromatic flavors, then ground to a powder. Based on region other spices like mace, nutmeg etc. can also be added. The advantage of homemade chola masala powder is that the aroma of spices is fresh unlike store bought powdered masala and not to mention there are no artificial colors or additives added when made at home.
