Bacon Sirloin Beef Tacos - Try These Next by Rockin Robin

Bacon beef sirloin tacos

1 1/2 lbs. beef sirloin (stir fry beef), cut into 1 inch pieces
1 can (15 oz.) diced fire roasted tomatoes
12 oz. uncured bacon, smoked applewood
3/4 tsp. salt or to taste
1/2 tsp each of ground cumin, ground oregano, and chile powder
1 medium white onion, chopped
2 -3 cloves of garlic, minced
1 jalapeo, seeded and diced

Garnish:
shredded iceberg or romain lettuce
shredded cheddar cheese
sour cream
avocado cubes

Cook the bacon in a frying pan until it is brown and crispy. Place the bacon onto a paper towel covered plate to drain and cool.

Chop the bacon into bite size pieces and set aside.

Pour out all but about 1 to 2 tbsp. of the bacon grease from the frying pan. Turn your heat to medium high and add the beef sirloin to the pan and sprinkle with the salt.

Cook the beef stirring frequently for 4 or 5 minutes until it is mostly brown. Then add the onion and jalapeo for an additional 2 or 3 minutes or until the onion and jalapeo are soft.

Add the garlic to the pan and cook for 1 minutes stirring well.

Next add the tomatoes, bacon, and spices to the pan. Stir well to combine and then let this simmer for 4 or 5 minutes.

While the meat is simmering, heat up your corn tortillas, one at a time in a dry pan over medium heat. I like to place the hot tortillas in a tortilla warmer which will keep your tortillas warm for 30 to 60 minutes. Perfect for entertaining.

When you are ready to serve this up, all you do is take out a hot tortilla and place a scoop full of the beef/bacon mixture in the middle of your tortilla and top it with a sprinkle of lettuce, a few dollops of sour cream and a few slices or cubes of avocado.

This makes a great taco bar especially when you are entertaining! So delicious! Enjoy this with side dishes of Spanish rice and refried beans.
