No Bake Carrot Cake With Cashew Cream Frosting

This raw vegan carrot cake recipe is fast, easy and packed full of wholesome, healthy ingredients such as chia seeds and dates. There is no refined sugar, it's dairy-free, egg-free, and totally delicious! The tangy frosting is made with soaked cashew nuts and lemon juice. INGREDIENTS
For the cake:
3 carrots
3/4 cup sultanas soaked
1 tbsp chia seeds
1/2 cup oat flour or almond flour
1 tsp mixed spice

For the cashew cream frosting:
1.5 cups cashews, soaked overnight
3 dates, soaked
1 tbsp coconut oil
Juice from 1 lemon
1/2 tsp vanilla extract
8 tbsp coconut milk
