Cinnamon cup brown sugar cup organic butter, meltedFilling:16 oz. regular cream cheese (I used Philadelphia brand), softened1 tsp. Vanilla extract cup of Rockin Robins caramel sauce, video link in description1 cup organic heavy whipping cream, chilled2 Tbsp. sugar tsp. Vanilla extractTools:8 inch spring form panDirections:Place the graham crackers in a food processor and process until you get small crumbs. Pour the crumbs into a mixing bowl and add the cinnamon and brown sugar. Stir and mix until everything is well combinedAdd the melted butter to the crumb mixture and stir with a fork and a spoon until all the crumbs are moistened with butter. The consistency should be like wet sand.Pour the graham cracker mixture into the springform pan and spread it out evenly over the pan. Then press the mixture evenly using your hand or the back of a spoon. The crust will not go up the sides of the pan very far, at most inch. Place the crust into the refrigerator until you are ready to fill it.In a large mixing bowl, add the softened cream cheese and mix for just 20 seconds and then add 1 tsp. Of vanilla extract.Mix until well combined, then add the dulce de leche (caramel sauce) and mix that in. Scrape down the sides of the bowl once or twice as you are mixing. Continue mixing until smooth and creamy.In another bowl, add the cold heaving whipping cream, tsp. Vanilla extract and the sugar. Mix on high until you get stiff whipping cream.Fold the whipping cream into the cream cheese mixture and then pour this into the springform pan. Place the cheese cake into the refrigerator overnight before serving.When you are ready to serve, run a knife around the outside of the cake around the rim to release the cake. Then release the spring form latch and lift the ring off the cake.You can drizzle dulce de leche (caramel sauce) over the top of the cake or you can drizzle individual pieces of cheesecake.
