Banana Bread The Buddhist Chef

Baked goods to do not have to be a guilty pleasure! When the right ingredients are selected, you can turn sweets into a delicious and nutritious snack option. Pranas Kilimanjaro trail mix is a great way to spice up this delicious Vegan Banana bread.

Banana Bread

2 ripe bananas 250 g
1 tablespoon of lemon juice 15 ml
1/2 cup vegetable oil 125 ml
1/2 cup soy milk 125 mL
1 cup of packed brown sugar 200 g
2 1/4 cups all purpose flour 300 g
1 teaspoon salt 5 g
1 teaspoon baking powder 5 g
1 teaspoon baking soda 5 g
1 PRANA kilimanjaro mix 150 g
1 tablespoon vegetable oil for the bread pan



Preheat the oven to 350 F / 180 C.
Oil a 23 x 13 cm (9 x 5) bread pan.
In a bowl whisk together the bananas, lemon juice, vegetable oil, soy milk
and brown sugar until smooth. Set aside.
In a separate bowl, combine flour, salt, baking powder, baking soda and kilimanjaro mix.
Add the dry ingredients to the wet and to stir as little as possible.
Spread the batter in the prepared pan.
Bake for about 45 minutes or until a toothpick inserted in the center comes
out clean.
Let cool completely on a wire rack before removing from the pan. Cut into
slices.
