BANANA CREAM PIE WITH CHOCOLATE LINING CAKE

Ingredients

4 bananas
2 tablespoons fresh cream
250 grams dark chocolate, roughly chopped
1½ cups cracker biscuit crumbs
2 tablespoons brown sugar
¼ cup melted butter
3 cups milk
¾ cup castor sugar
1 egg
½ cup refined flour
2 tablespoons whiskey
2 teaspoons lemon juice
½ cup whipped cream

Method

1. Preheat oven at 180ºC.
2. Take biscuit crumbs in a bowl. Add brown sugar and butter and mix well.
3. Spread the mixture on the base of a loose bottom tin. Put in the preheated oven and bake for 5-7 minutes.
4. Combine together cream and chocolate in a double boiler, mix and let the chocolate melt. Remove from heat and mix till smooth and it reaches room temperature.
5. Pour the chocolate mixture over the base, spread evenly, tap and refrigerate for 15-20 minutes.
6. To make custard, heat milk in a non-stick pan and bring to a boil.
7. Take castor sugar in a bowl. Add egg and refined flour and beat well.
8. Add very little boiled milk and beat well. Add remaining boiled milk and beat well.
9. Transfer the milk-flour mixture back into the pan, place on heat and cook for 3 minutes or till the mixture thickens, mixing continuously. Remove from heat and set aside to cool for 10-15 minutes.
10. Add 1 tablespoon whiskey to the custard and mix well.
11. Slice the bananas and transfer on a plate. Add lemon juice and mix well.
12. Place the banana slices over the chocolate layer, pour the prepared custard on top and spread evenly. Refrigerate for 3-4 hours or till set.
13. Take whipped cream in a bowl. Add remaining whiskey and mix well.
14. Fill a piping bag fitted with a star nozzle with the flavoured whipped cream.
15. Demould the pie and place on a serving plate. Pipe out whipped cream rosette on top, garnish with chocolate chips and serve immediately.
