Add the olive oil and once it shimmers, set the beef into the pan to sear. Once you've laid the meat into the pan, do not move it. Let it cook for about 3 to 4 minutes. This will give it a nice sear.Continue to sear all sides of the meat and then set the pieces on a clean plate. Lower the heat to medium low, add a tablespoon of olive oil and add the onion. Saute the onion for about 5 minutes or until the onions soften and turn slightly brown.Add 1/2 cup of the chicken broth to the pan to deglaze it. Scrape the pan to release all the brown bits stuck to the bottom of the pan. Pour the onion/broth mixture into the crockpot and add the beef on top.Place the following ingredients into a blender:the remaining chicken brothapple cider vinegarlime juicegarlicallspiceclovesclovesoreganochipotle peppersground cuminsaltBlend for about 30 seconds and pour over the meat. Add the bay leaves and submerge them in the liquid.Cook on high for 6 hours. When done, place the meat on a cutting board and shred it with two forks. The beef will be very tender. Remove any excess fat and place it back into the crockpot to keep warm. Warm flour tortillas and fill with the barbacoa, cilantro lime rice, shredded cheese, guacamole, and sour cream.
