A quick and easy recipe to make lovely basundi for your friends and family.BASUNDIIngredients1 litre milk2 tbsps cornflour4 tbsps milk powder8 tbsps sugar1 tsp green cardamom powder1 tbsp chopped pistachios + for garnish1 tbsp chopped almonds + for garnish 8 small rasgulla pieces/ 12-15 angoori rasmalaiMethod1. Add 2 tbsps milk in cornflour. Mix well.2. Heat a non-stick deep pan, add the remaining milk and boil it. Add corn flour mixture and milk powder. Mix well. Simmer on low heat, stirring continuously.3. Add sugar in non-stick deep pan and caramelize the sugar on medium heat till lightly brown in colour and melts completely, stirring continuously. Add little water if needed. 4. Add milk mixture gradually in caramelized sugar and combine well. Add green cardamom powder, chopped pistachios and chopped almonds. Mix well. Switch off heat. Set aside. Refrigerate for 2-3 hours to let it set. The basundi should be thick in consistency and brown in colour.5. Transfer basundi in serving bowls.6. Serve chilled, garnished with chopped pistachios, chopped almonds, 2 small rasgullas in each bowl.
