In fact my kitchen is beaming with relief because the kitchen is devoid of angry fumes of deep-fried oil!! Such a simple method!Here comes the recipe of Batata Vada!1. Potato – 1/2 kg2. Big onions – 13. Green chilies – 24. Ginger – to taste5. Cumin seeds – 1tsp6. Asaefotida – to taste7. Turmeric powder – to taste8. Coriander leaves – 1 bunch9. Lemon juice – 1tsp19. Oil to cook20. Salt to tasteIngredients for the batter:1. Besan/Chick pea flour – 1 cup2. Red chili powder – to taste3. Asaefotida – to taste4. Salt- to taste5. Oil – 1 tbsp6. Eno fruit salt – 1/4 tspMethod for the stuffing:1. Boil the potatoes, peel, mash roughly and keep aside2. Chop the onions, green chilies, coriander leaves and ginger finely3. Now, heat the kadai/pan, add few teaspoonful of oil4. To the hot oil, add cumin seeds and allow to splutter5. Now add the chopped green chilies, ginger and onions and stir fry till onions are translucent6. Then add the mashed potatoes and cook everything together7. Add red chili powder and salt and toss together8. Now it’s time to add a dash of lemon juice and chopped coriander leaves9. Allow to cool a bit and shape into small ballsMethod for the batter:1. Add the chili powder, salt, asaefotida, oil and salt to the besan or chick pea flour2. Now add water slowly to make a smooth batter that coats the back of the spoon3. Then add eno fruit salt and briskly mix till the batter is frothyMethod to make Batata Vadas:1. Heat an Appam maker or a doughnut maker and add few drops of oil in each slot2. Dip each ball of the stuffing into the besan batter and place into the Appam maker slots or doughnut maker slots3. Cover and cook over dim flame till golden on one side4.
