Beans Carrot Coconut dry curry/subzi | Gayathiri's Cookbook

Beans Carrot curry is a simple stir fry, low-fat and colorful curry. It tastes great with sambar, rasam and rice.

Ingredients:
Oil- 2 tsp
Mustard seeds- 1/2 tsp
Uraddal- 1 tsp
Channadal- 1 tsp
Red chillis- 2
Beans- 1/2 lb
Carrot- 4
Turmeric powder- 1/4 tsp
Salt- 3/4 ts
Coconut- 1/2 cup
Paruppu podi(optional)- 1 tsp

Directions:
1.Heat 2 tsp oil in a pan. Add mustard seeds. When it starts to crackle, add channel, uraddal and red chillies. Saute until dal turn golden brown.
2.Add green beans, carrot and 1 cup of water. Cover the lid and cook with turmeric powder and salt until the vegetables are soft.
3.When the vegetables are cooked add shredded coconut and parupu podi. Mix it well. Then switch off the heat.

Beans carrot curry is ready!!
