Beer Can Chicken (with wine)


Cooking this over indirect heat on relatively low heat produces a chicken that is very moist and delicious. You've got to try it.

Ingredient rub:
1/4 cup brown sugar
1 Tbsp. chile powder
1 Tbsp. smoked paprika
1/2 tsp. salt
1 tsp. dried basil

Ingredients for beer can:

1 whole chicken
1 aluminum can, any kind, rinsed
white wine or other liquid, even soda
1 or 2 sprigs of fresh rosemary
2 to 3 cloves of garlic, peeled


Directions:
Preheat the bbq grill so that you place the chicken under indirect heat. I turn off two burners directly under my chicken and have the two outside burners on each side on medium low to start.

I have a built in thermometer on my bbq so I try and keep the temperature between 300 - 325 degrees F.

Combine all of the rub ingredients in a bowl.

Use a beer can holder. Rinse and pat dry the chicken.

Fill the aluminum can with white wine, 2/3's full. Place the rosemary and garlic in the can as well.

Place the beer can holder on a baking sheet to catch drips. Place the chicken over the holder.

Coat the chicken with olive oil. Pat the rub all over the chicken, getting it into all the nooks and crannies. Pack it on as thick as you can.

Place the chicken on the holder by placing the big cavity of the chicken over the can. Then place the whole thing directly on the bbq grill. The baking pan is just used to catch the rub when you apply it.

Roast the chicken for about 1 to 1 1/2 hours or until the internal temperature reaches 180 degrees F.

Test the chicken after an hour and see where you are at. I like those instant read thermometers as they work fast.

Getting the chicken off the grill can be a challenge. I used a clean dish towel to grab the chicken and the holder and placed it back on the baking sheet to carry it back in the house.

After cooling the chicken on the rack for 10 minutes. Us the towel to lift the chicken off the can.

If you have a hard time, try laying the chicken down on the baking sheet, as in the video, and then pull the can out.

Cut up and enjoy!
