Mutton pieces cooked with potatoes in spicy gravy.BENGALI MUTTON CURRYIngredients750 grams mutton on bone, cut into piecesSalt to taste½ teaspoon turmeric powder1 tablespoon ginger-garlic paste1 tablespoon red chilli powder1 teaspoon coriander powder1 cup onion paste1 tablespoon ghee1 bay leaf2 medium potatoes, peeled and cut into cubes1 tablespoon chopped fresh coriander leaves¾ cup yogurtA pinch sugar Method1. Take mutton in a bowl. Add salt, turmeric powder, ginger-garlic paste, chilli powder, coriander powder and onion paste and mix well. Set aside to marinate for an hour.2. Heat ghee in a non-stick pan. Add torn bay leaf and sauté for 30 seconds. Add potatoes and sauté till golden. 3. Add marinatedmutton, mix and cook on high heat for 5 minutes. Add chopped coriander and mix well. Add yogurt and mix well. 4. Add sugar, mix, cover and cook on low heat for 35 minutes. 5. Serve hot garnished with a coriander sprig.
