BHUTTA SALADIngredients2 corn on cob (bhutta)Olive oil for brushing10-12 cherry tomatoes2 lemons Salt to tasteRed chilli powder for sprinkling2 cups mixed leaves (iceberg lettuce leaves and arugula leaves)Dressing¼ cup orange reduction 1 teaspoon honey1 tablespoon olive oil½ teaspoon red chilli flakesSalt to tasteCrushed black peppercorns to tasteMethod1. Place a grill rack directly on flame.2. Brush some olive oil on each corn on cob and place on the flame and roast from all sides till golden.3. To prepare dressing, take orange reduction in a bowl. Add honey and olive oil and whisk. Add chilli flakes, salt and crushed peppercorns and whisk well.4. Halve cherry tomatoes. 5. Place roasted corn on cob on the worktop.6. Cut lemons into wedges and rub it over each roasted corn on cob from all sides. Sprinkle some salt and chilli powder on all sides.7. Cut the prepared corn on cob into 1 inch roundels. 8. Take mixed leaves in another bowl. Add halved cherry tomatoes, corn roundels and some dressing and toss to mix.9.
