Biye Barir Chicken Roast

Serves 4-5
Recipe in English:

Ingredients:
-Chicken tikka pieces 1 kg
-Lal mirch powder (Red chili powder) 1 tsp or to taste
-Namak (Salt) ½ tsp or to taste
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Dahi (Yogurt) 2 tbs
-Badam (Almonds) 8-10
-Kaju (Cashew nuts) 10-12
-Hari mirch (Green chilies) 3-4
-Pyaz (Onion) 1 small
-Pani (Water) 1-2 tbs
-Dahi (Yogurt) whisked ¾ Cup
-Garam masala powder 1 tsp
-Jaifil powder (Nutmeg powder) ¼ tsp
-Lal mirch powder (Red chili powder) 1 & ½ tsp or to taste
-Javatri powder (Mace powder) ¼ tsp
-Namak (Salt) 1 tsp or to taste
-Cooking oil ¾ Cup
-Pyaz (Onion) sliced 1 medium
-Hari elaichi (Green cardamom) 5-6
-Sabut kali mirch (Whole black pepper) ½ tsp
-Tez paat (Bay leaves) 2
-Darchini (Cinnamon sticks) 2
-Zeera (Cumin seeds) 1 tsp
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Tomato paste 3 tbs
-Pani (Water) warm 1 Cup or as required
-Pyaz (Onion) fried 2 tbs
-Dry milk powder 1 tbs
-Cheeni (Sugar) 1 tsp

Directions:
-Add cuts on chicken tikka pieces with the help of the knife.
-In bowl,add chicken pieces,red chili powder,salt,ginger garlic paste and yogurt,mix well,cover and marinate for 30 minutes & set aside.
-In spice mixer,add almonds,cashew nuts and grind well.
-Add green chilies,onion,water,grind well & set aside.
-In bowl,add yogurt,grinded almond & cashew paste,garam masala powder,nutmeg powder,red chili powder,mace powder,salt,mix well & set aside.
-In pot,add cooking oil,marinated chicken pieces and fry from both sides until golden brown (8-10 minutes each side) & set aside.
-In the same pot,add onion and mix.
-Add green cardamom,whole black pepper,bay leaves,cinnamon sticks,cumin seeds,mix well and fry until light golden.
-Add ginger garlic paste and mix well for 2 minutes.
-Add tomato paste and mix well.
-Now add prepared yogurt marination,mix well and cook for 5 minutes.
-Add warm water and mix well.
-Add fried chicken pieces,fried onion,dry milk powder and sugar,cover and cook on low flame for 12-15 minutes or until oil separates.

-Zeera (Cumin seeds) 1 tsp
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Tomato paste 3 tbs
-Pani (Water) warm 1 Cup or as required
-Pyaz (Onion) fried 2 tbs
-Dry milk powder 1 tbs
-Cheeni (Sugar) 1 tsp

Directions:
-Chicken tikka pieces mein knife ki madad sa cuts laga lein.
-Bowl mein chicken pieces,lal mirch powder,namak,adrak lehsan paste aur dahi dal ker ache tarhan mix karein aur dhak ker 30 minutes kliya marinate ker lein & side per rakh dein.
-Spice mixer mein badam aur kaju dal ker ache tarhan grind ker lein.
-Hari mirch,pyaz aur pani dal ker ache tarhan grind karein & side per rakh dein.
-Bowl mein dahi,grinded badam & kaju ka paste,garam masala powder,jaifil powder,lal mirch powder,javatri powder aur namak dal ker ache tarhan mix ker lein & side per rakh dein.
-Pot mein cooking oil aur marinated chicken pieces dal dein aur dono sides sa golden brown hunay tak fry ker lein (8-10 minutes each side) & side per rakh dein.
-Us he pot mein pyaz dal ker mix karein.
-Hari elaichi,sabut kali mirch,tez paat,darchini aur zeera dal ker ache tarha mix karein aur light golden hunay tak fry ker lein.
-Adrak lehsan paste dal ker 2 minutes kliya ache tarhan mix ker lein.
-Tomato paste shamil karein aur ache tarhan mix karein.
-Ab tayyar dahi ki marination shamil karein aur ache tarhan mix ker ka 5 minutes kliya paka lein.
-Neem garam pani dal ker ache tarhan mix ker lein.
-Fried chicken pieces,fried pyaz,dry milk powder aur cheeni dal ker dhak dein aur halki ancch per 12-15 minutes ya oil alag hunay tak paka lein.
