Black eyed beans salad - Greek and Vegan!

You 'll need:

1/2 lb black eyed beans/ peas
1 dry onion
3 green onions
Parsley
1/4 cup olive oil
1/4 cup vinegar
Salt and pepper

Soak your beans in water over night.
Boil them for 5 minutes then drain them and replace the water with freshly boiling water.
Boil them for 30-40 minutes, until soft but not flaky. Then drain them and leave them aside to cool down.
Clean and chop the green onions, dry onion and parsley.
Mix the oil with the vinegar and the salt and pepper.
In a big salad bowl, put the beans, then the onions and then the oil and vinegar mix. Stir very well.
Add the parsley and stir again.
