YOUVARLAKIA the GREEK and VEGAN way

For the meatballs aka youvarlakia you 'll need:
A pound of Vegan ground beef
Half a cup of shredded carrot
A chia egg (1 tbsp chia, 3 tbsp water)
One chopped onion
1/4 cup risotto rice presoaked in water for 15 minutes
3 tbsp olive oil
2 tbsp parsley and 2 tbsp of dill
Salt and pepper

Start by adding all the ingredients in a large bowl
Mix everything very well and make little meatballs
Put the youvarlakia in the fridge while you prepare the soup

For the soup youll need
3 tbsp of olive oil
1 chopped potato
1 chopped carrot
1 chopped onion
1 bouillon cube
A little bit of dill
2 tbsp of corn starch mixed in half a cup of water
2 tbsp of vegan yogurt
Salt and pepper
The juice of two lemons

Start by heating the oil, then saut the onion, potato and carrot
Add 1,5 liters of boiling water, the bouillon cube and stir
Add the youvarlakia, stir carefully, cover with a lid and turn the heat down to low
Let cook for 25 to 30 minutes

Finally, take a serving spoon of the broth
Mix it with the juice of two lemons
The corn starch and 1-2 tbsp of vegan yogurt
Add it to the soup and stir gently
Add some dill for decoration
