Boondi Laddoo/laddu/ladoo/லட்டு | Gayathiri's Cookbook

Boondi Ladoo(லட்டு) is the special and unique type of Indian sweet which is served at just about any special occasion in India.These ladoos are a mix of small boondis.Many people think that making laddu/ladoo at home is very difficult but it is not so.It is so easy to make. Just follow the steps precisely.

Ingredients:
Gramflour- 1 cup
Riceflour- 3/4 tbsp
Salt- A pinch
Kesari powder- A pinch
Baking soda- 1 Tsp
Sugar- 2 cups
Ghee- 2 tbsp
Cashews- As needed
Raisins= As needed
Cloves- 6-8
Oil- for frying

Directions:
1.Take gram flour, rice flour, baking soda,kesari powder and salt in a bowl.Mix it well with no lumps remaining.
2.Add water little by little to form a smooth batter(dosa batter consistency).
3.Heat oil in a kadai.Place jahrni on top of the oil. Pour a ladle of batter on jahrni and spread it with the ladle.
4.Fry boondis in oil. When it is cooked but not crispy, take it out.
5.Fry all boondis like this until the batter is finished.
6.Boil 2 cups sugar with 1/2 cup water.when the sugar has dissolved and it reaches a half-string consistency, switch off the heat. Add cardamom powder.
7.Add the fried boondis into the sugar syrup. Stir and mix well. The boondis should get softened in the sugar syrup.
8.Fry some cloves, cashews and raisins in ghee, and add it to the soaked boondis.
9..After it get softened, press or bash the boondis in the sugar syrup.(the oil from the boondi comes out and bind with the syrup and keeps the ladoo moist and soft). Make ladoos when it is still warm.
Laddoo is ready!!.
