A typical yet satisfying Zi Char dish, Braised Fish Head with Bitter Gourd tantalises all taste buds.

The sweetness of fresh fish head, the bitter from the gourd and the umami saltiness of fermented black beans paired with delicate textures of fish and crunchy chunks of bitter gourd - the hawkers really got it right!

Ingredients here
750g fish head (garoupa, threadfin or snapper)
350g bitter gourd (sliced)
Oil for deep frying
3 shallots (sliced)
5 cloves garlic (smashed)
20g ginger (sliced)
2 tbsp fermented black beans
2 red chillies (sliced)
3 stalks spring onion
1 cup water
1 tbsp light soya sauce
tsp dark soya sauce
1 tbsp oyster sauce
2 tbsp Shaoxing wine
tsp sugar
tsp pepper
2 tbsp oil
1 sprig coriander
50g potato flour

Marinade for fish head:
tsp salt
tsp pepper
1 tbsp ginger juice
1 tbsp Shaoxing wine
1 egg white
