Brazilian and Dutch accent challenge with po de queijo and hollandaise sauce

INGREDIENTS
For the hollandaise sauce
3 tbsp coconut butter
3 tbsp egg substitute
2 tbsp lemon juice
1 tsp dijon mustard
1 cup water

For the po de queijo
4 small potatoes
1/2 big onion
1 garlic clove
Salt
1/3 cup oil
2/3 cups water
4 cups tapioca starch
