Dr. Kusum Lata Mehta - Broccoli Malai Kofta

BROCCOLI MALAI KOFTA

Ingredients

1 large broccoli, separated into florets
2 tablespoons butter
1 cup fresh breadcrumbs
1 teaspoon dried oregano
Oil for deep-frying
3 tablespoons grated processed cheese
2 green chillies, finely chopped
Salt to taste
Fresh cream for garnishing
Gravy
1 cup cashewnut-melon seed paste
2 tablespoons oil
¾ cup tomato puree
2-3 tablespoons fresh cream

Method

1. Heat butter in a non-stick pan. Add broccoli florets and sauté well. Transfer in a blender jar. Add breadcrumbs and oregano and blend into a smooth paste.
2. To make gravy, heat oil in another non-stick pan. Add cashewnut-melon paste and tomato puree and mix well. Add salt, mix well, cover and cook till the oil leaves the sides of the pan.
3. Heat sufficient oil in a kadai.
4. Transfer the ground paste in a bowl. Add cheese, green chillies and salt and mix well. Divide the mixture into equal portions and shape them into koftas or balls.
5. Deep-fry the prepared koftas in hot oil till golden and crisp. Drain on absorbent paper.
6. Add cream to the gravy and mix well. Switch off heat.
7. Pour some of the prepared gravy in a serving bowl. Place the fried koftas on it and pour the remaining gravy on top. Garnish with a swirl of cream and serve hot.
