Broiled Lobster Tails
Ingredients:
2 Lobster tails because you want to share this with someone!
1 organic lemon, zest
1 Tbsp. lemon juice
cup unsalted brown butter, video on how to make it:
1 clove garlic, minced
A small handful of fresh parsley, chopped
tsp. Paprika, and or other spices like chile powder and smoked paprika can be used.

Directions:
Place oven on broil.

Make sure your lobster tails are fully defrosted before you cook them. If you buy them frozen, let them thaw in the refrigerator for 24 hours. You can also defrost them quicker by placing them in a ziploc type bag, press out the air and seal them up. Place this bag in a pot of cold water and replace the water every 20 minutes until thawed completely,.

To cup of this butter add the zest from the lemon as well a 1 Tbsp. of the juice. Add the garlic, salt, paprika and parsley and stir to combine. Be sure to taste this and adjust the seasoning if you like.

Weigh the lobster so you have an idea how many ounces it is. This will give you a good idea on how long it takes to cook. The rule of thumb is 1 to 1 minutes per ounce. So my lobster weighed 6.8 ounces. This means it can take anywhere from 6, almost 7 minutes up to a little over 10 minutes to cook. My lobster took 9 minutes. Check with an instant read thermometer and look for 140 degrees F. The lobster meat should also look opaque.

Once you have the weight, use kitchen shears and cut the shell down the back all the way to the tail. Try not to cut the meat. I did not cut through the tail but you can. Carefully crack open the shell to expose the meat. Then run your fingers down the sides of the shell to release the meat.

Run your fingers on the bottom to release the meat from the bottom of the shell. You should be able to lift the meat out of the shell. When you do, try to close the shell together so you can lay the meat on top of it.

Clean off any shell pieces that may have broken off. Place the lobster tail(s) on a foil covered baking sheet and brush the brown butter sauce all over the meat. To make it easier, lift the meat up off the shell and bush butter on the bottom of the meat. Place the meat back on top of the shell and give the meat a nice coating of sauce all over the top. Be generous.

Place the lobster in the oven, 6 inches below the heating element. I left the door ajar so I could watch it cooking. Check the internal temperature at around 6 minutes and cook until the internal temperature reaches 140 degrees F. and the meat looks opaque. Baste with more butter after you check at 6 minutes.
Serve with roasted potatoes and steam broccoli if you like. Enjoy!
