BURRITO BOWL - (Serves - 4)

Ingredients

½ cup boiled kidney beans
2 cups cooked rice
2 tablespoons sour cream
1 teaspoon chipotle paste
1 teaspoon chopped garlic
Salt to taste
1 tablespoon lemon juice
6-8 iceberg lettuce leaves
½ cup boiled corn kernels
1 medium tomato, chopped
¼ cup salsa
¼ cup guacamole
4 tablespoons chopped fresh coriander leaves

Method

1. Combine sour cream, chipotle paste, garlic, salt and lemon juice in a bowl and mix.
2. Divide the rice equally into four medium bowls. Place few torn lettuce leaves and put some corn kernels, kidney beans and tomato on top.
3. Sprinkle some salt on top and put some salsa, guacamole and coriander leaves. Drizzle some sour cream mixture on top.
4. Serve immediately.
