Of honeySalt and pepper to tasteDirections:Preheat oven to 500 degrees F.Mix the dressing ingredients in a jar like a mason jar and shake until thoroughly combined.With the chicken breast, you would like them to be no more than inch thick. You can accomplish this by either cutting them in half by butterflying them or pounding them with a meat pounder. But you really should butterfly them and maybe even pound them a little to even them out. If you dont cut them first, and you just pound them, you will end up with a very large chicken breast.Place the chicken breast into a 9 x 13 baking dish and cover them with the oil and vinegar dressing. Pour just enough or spoon over just enough to marinate the chicken for 30 minutes to 2 hours. If you go longer than 30 minutes, cover the breast and place them in the refrigerator.When you are ready to cook the chicken caprese, sprinkle a little salt and pepper over all and then lay slices of the fresh mozzarella to cover the chicken. Add 2 to 3 slices of tomato on top of the cheese.Place in the 500 degree F oven for about 13 minutes or until an instant read thermometer reads 165 degrees F.
