Take a peeler and make thin wide strips of carrot and place them in a bowl. Drizzle the olive oil and massage the oil into the carrot strips with clean hands. Season the carrots with salt, chipotle seasoning, and ground cumin.Feel free to use any spices you like, such as cinnamon, chile powder, garlic powder, onion powder, smoked paprika etc.Pour out a single layer of carrots strips onto a cookie sheet and spread them out so they aren't touching each other. This is important so they can crisp up and get crunchy.Bake for 15 minutes and then check them. Turn over any chips that start browning. Bake an additional 10 minutes or until the carrots are crispy.
