Thank you very much for your support! ~ Rockin RobinCauliflower Potato SaladIngredients:1 head organic cauliflower, cut into bite size pieces3 pastured eggs6 - 8 slices of bacon, 1 tsp apple cider vinegar1 to 1 cups of avocado mayonnaise, I used Sir Kensingtons1 Tbsp. dijon mustard yellow onion, super fine dice2 organic stalks, super fine dice1 radish, super fine dice3 green onions, choppedHandful of organic parsley, choppedSalt PepperDirections:Place the eggs in a saucepan and fill with cold water until the eggs are covered by about 1 inch of water or more.Place the pan on the stove over high heat. When the water comes to a boil for 30 seconds, turn off the heat and cover the pot with a lid. Set the timer for 17 minutes. When the timer is done, drain the water and add cold water to the pan and wait a few minutes until the pan of water warms up. Drain again and fill with cold water again only this time add a bunch of ice cubes to really cool the eggs.Once the eggs have completely cooled down, say after 30 minutes, peel, rinse, and cut up the eggs into chunks and place in a large mixing bowl.Next fry the bacon in a large frying pan over medium heat. Chop the bacon into small pieces and set aside.Cut the cauliflower into florets. Drain and rinse in cold water and drain again. Place the cauliflower into your large mixing bowl with the eggs.Add the chopped radish, green onion, yellow onion, celery, parsley and stir to combine. Add the mayonnaise starting with 1 cup, along with the mustard and apple cider vinegar and stir to combine.If needed, add more mayo until you get the consistency you like. Add salt and pepper and bacon and stir once more. Taste and adjust seasonings as needed.
