Set aside.Take the ground up saffron and place it into the wine to let it infuse into the wine for about 20 minutes as well. Be mindful that the saffron and its beautiful bright color can stain countertops and clothes so handle with care.In the meantime, cut the florets off of the cauliflower and place them into the food processor and pulse until if is rice like.After 20 minutes, drain and rinse the mushrooms and then chop them up as much as you like.In a medium frying pan over medium high heat, add 1 Tbsp. of olive oil to the pan and once hot, add the onion. Saute the onion for 3 minutes and then add the mushrooms and continue sauteing for 5 to 7 minutes longer.In another frying pan, heat up the sliced sausage over low heat so that when you add it to the cauliflower rice it will be hot.Once the onion/mushroom mixture is done, add another tablespoon or so to that pan and then add the cauliflower and some salt. Stir everything to combine well.Then add the wine/saffron mixture and the chicken broth to the pan and stir to combine that as well.Continue to cook the cauliflower mixture for between 5 and 7 minutes depending on how done you like your cauliflower. Next, add the cheeses and stir them in. Once the cheese is combined, add the sausage and stir that in. You are now ready to serve this up.Thanks for watching and sharing!Rockin RobinP.S.
