Cauliflower Risotto with Bacon Dads That Cook

Hey, it's Jason Glover, Dads That Cook. I got my buddy, Glenn, all the way out from New York. He is a brand new dad. New. New. Like, super new. He's only got like a three month old. Yeah.

We're mid way through this recipe that he's been making which is a cauliflower risotto. Now, I know most of us have a rice kind of risotto, but this is a cauliflower one. So, why don't you, Glenn, kind of walk us through a little bit what we've already been through.
We started by rendering down some bacon-Yeah.
You know, we want that nice crispy bacon we can kind of put aside, and then we'll use that fat to render down a little bit of garlic, little bit of onion, and some baby bella mushrooms.
Okay. Three to five minutes on that, and then we went for some chicken stock. Cup of chicken stock or so, and we added that, and the cauliflower rice. You can get that premade at a lot of grocery store. We threw that in with the chicken broth. About five minutes, so that way, and just until the cauliflower was absorbing that chicken broth, and then we added a little bit of butter.
Do you like butter? I like butter.
And, then kind of where we're at now is we just finished that. It absorbed, and then we took a cup of heavy cream, put that in, and we put that in with about a cup and a half of parmesan cheese.
Right. So, we'll take that immersion blender and we're just going to give it a couple of pulses just to kind of break down some of those bigger pieces.
You can see it just start to break down immediately.
And, you don't want to make it into a soup because that's not what we're trying to do.
No, we're not.
We're just a couple of pulses with the blender just to give it enough texture that you still feel it and you can taste it-
Yep. And, it's still explodes in your mouth. Throw a little bit of bacon in. Get it blended in so that way, you know, you're not disappointed when you have that bite that you've been looking for, right, and then have a little extra on top in that bowl.
Aw, it's good. It's risotto. It's a puree. It's-Cauliflower.
Cauliflower. It's bacon.
Not like you've ever had it before. No, and the creaminess of the cheese-Aw.
I mean, that's just insane, dude. All your friends are going to be like, aw man, dude. Dude, when are you having another party?
