Dr. Jayshree Sanjay Shah - CBC BarfiCBC BARFIIngredients2 cups grated carrot3 cups grated beetroot1½ cups scraped fresh coconut⅓ cup ghee + for greasing 1 cup condensed milk½ cup roasted and chopped cashewnuts ½ teaspoon nutmeg powder1 teaspoon green cardamom powder2 tablespoons almond flakesMethod1. Heat a non-stick pan. Add carrot, beetroot and coconut, mix well and sauté well. 2. Add ghee, mix well and sauté for 5 minutes. Add condensed milk and mix well. 3. Add cashewnuts, nutmeg powder and cardamom powder, mix well and cook till the mixture leaves the sides of the pan. 4. Grease a barfi tray with some ghee and spread the cooked mixture in it. Top with almond flakes and cool to room temperature.5. Cut into pieces and serve.
