Cheese Bun Omlette | Sanjeev Kapoor Khazana

Yummy cheesy omelette stuffed within bun makes for a filling and delicious snack.

CHEESE BUN OMLETTE

Ingredients

8 tbsps mozzarella cheese, grated
8 tbsps processed cheese, grated
4 burger buns
8 eggs
Salt to taste
Crushed black peppercorns to taste
Oil to drizzle
8 tsps butter + for spreading
1 large onion, sliced
1 large tomato, chopped
4 tsps chopped fresh coriander leaves
4 green chillies, chopped
8 tbsps corn kernels, boiled and crushed
6-8 mushrooms, chopped
Fried potato wedges to serve
Tomato ketchup to serve

Method

1. Break eggs in a bowl, add salt and crushed black peppercorns. Mix well. Set aside.
2. Heat a non-stick tawa, drizzle oil and add 4 tsps butter, melt it and add the egg mixture and spread it. Add onion, tomato, coriander leaves, green chillies, corn kernels and mushrooms.
3. Add mozzarella cheese, processed cheese in the centre of the omelette. Fold the omelette in a square.
4. Make cut through a bun into half, apply butter on buns. Flip and apply butter on other sides. Slowly turnover the omelette and cook till golden brown on both sides.
5. Place the omelette on the bun and cover with the other bun.
6. Serve hot with fried potato wedges and tomato ketchup.
