Raw banana and sweet corn tikkis stuffed with cheese, crumbed coated and fried till they are golden brown and crisp. CHEESY NUGGETS - (Serves - 4)Ingredients100 grams processed cheese, cut into small sticks 2 large raw bananas, boiled, peeled and mashed1 cup fresh brown breadcrumbs + for coating ¼ cup crushed sweet corn¼ cup finely chopped mixed capsicum1 tablespoon chopped fresh parsley1-2 green chillies, finely choppedCrushed black peppercorns to taste¾ teaspoon red chilli flakes1 teaspoon dried oreganoSalt to taste 5-6 tablespoons refined flour (maida)Oil for deep-frying Fresh mint sprig for garnishingGreen chutney for serving Method1. Mix together raw banana, breadcrumbs, sweet corn, capsicum, parsley, green chillies, crushed peppercorns, chilli flakes, oregano and salt in a bowl.2. Divide the mixture into equal mini portions and stuff each with a cheese stick. 3. Mix flour in some water to make a smooth slurry. Spread sufficient breadcrumbs on a plate.4. Dip the prepared nuggets in the slurry and coat with the breadcrumbs. 5. Heat sufficient oil in a kadai. Deep-fry the nuggets till golden brown and crisp. Drain on absorbent paper. 6. Garnish with mint sprig and serve hot with green chutney.
