CHERRY HAND PIES WITH WINEIngredients15-20 dried cherries250 grams puff pastry dough2-3 tablespoons dry red wine75 grams castor sugar2 teaspoons cornflour½ teaspoon crushed star anise2 tablespoons refined flour + for dustingIcing sugar for dustingMethod1. Preheat oven to 180̊ C.2. To make the filling, deseed and put dried cherries in a bowl. Add castor sugar and cornflour and mix. Add wine and mix. Add star anise and 2 tablespoons flour and mix well. 3. Dust the worktop with some flour, place the dough and roll out into semi-thick sheet. 4. Cut the sheet into roundels using a large cookie cutter and roll each roundel into thin discs, dusting with some flour.5. Cut one side of each disc using a small cookie cutter and discard the small roundels. 6. Put some filling on the other side of each disc, apply some water on the edges, fold each disc into a moon shape and press the edges to seal.7. Lightly press a fork on the edges of each prepared pie to create a pattern. 8. Line a baking tray with a parchment paper and place the pies on it. Put the tray into the preheated oven and bake for 15-20 minutes.9. Dust some icing sugar on top and serve.
