Chia Pudding, Chocolate/Strawberry and Lemon/Blueberry

Lemon/Blueberry Chia Pudding
Ingredients:
cup white chia seeds
1 cup Almond milk
Juice from organic lemon
Zest from 1 organic lemon
cup fresh organic blueberries
cup walnut pieces
cup Greek yogurt
1 Tbsp. maple syrup
tsp. Ground turmeric
A few dashes of pepper
tsp. Vanilla extract

Directions:
Combine the milk, yogurt, lemon zest, lemon juice, maple syrup, vanilla extract, turmeric, and the pepper, using a whisk. Once combined add the chia seeds and stir.

Using a ladle, spoon the mixture into individual serving containers. I used 8 oz or pint sized mason jars with a wide mouth which work great.

Only fill them of the way so you have room to add the walnuts and blueberries. You can add as much of that as you like.

Cover the containers and refrigerate at least a few hours and overnight is best. These are perfect for a grab and go breakfast.

Chocolate/Strawberry Chia Pudding Recipe

Ingredients:
cup chia seeds
1 cup almond milk
cup cocoa powder, unsweetened
cup brown sugar, packed
Pinch of salt
tsp. Vanilla extract
Sliced organic strawberries
Cacao nibs dipped in dark chocolate, I got mined from Trader Joes

Directions:
In a medium bowl, combine the almond milk, chia seeds, cocoa powder, brown sugar, pinch of salt, and the vanilla extract. Whisk to combine.

Add the strawberries and cacao nibs and stir. Cover and refrigerate preferably overnight.

Enjoy this chocolate pudding as a breakfast or dessert. Its delicious with a dollop of whipping cream.
