Chicken Cacciatore Recipe
Ingredients:
5 chicken thighs, bone in, skin on
yellow onion, diced
2 stalks of organic celery, diced
1 large organic carrot, diced
1 14 oz. can diced fire roasted tomatoes
1 cups of chopped mushrooms
2 Tbsp. tomato paste
4 cloves of garlic, minced
1 can (14 oz.) pitted organic black olives, drained
cup red wine, I used a cabernet
1 tsp. Dried oregano
4 sprigs of fresh rosemary
4 sprigs of fresh thyme, petals removed and chopped
Olive oil
Chicken broth
Basil leaves
Parsley

Directions:
Salt and pepper both sides of the chicken thighs. Preheat a cast iron pan over medium high heat. Once hot, add 1 tsp. of olive oil to the pan and swirl to coat. Lay the chicken thighs, skin side down and let them cook for about 5 minutes or until it is golden brown. Cook another 5 minutes or until golden brown and then place the thighs on a clean plate.

Lower the temperature on the pan to low. Add another 2 tsp. of olive oil and add the onion, celery and carrots. Saute these with a lid for about 10 minutes or until the carrots are fork tender. Push the carrot mixture to the side of the pan and add the tomato paste. You want to smash the paste into the pan and let it caramelize. Let it cook 1 minute and then stir it and let it cook another minute before stirring it into the carrot mixture.

Add the garlic and stir that in for 1 minute. Add the wine to deglaze the pan. Turn off the heat and let this cool before placing it into a blender.

After placing the mixture into a blender add just enough chicken broth to blend it. You want the sauce to be thick and smooth.

Pour the sauce into the instant pot. Add the chicken thighs and push them into the sauce. Add the can of diced tomatoes, chopped mushrooms, dried oregano, chopped basil, thyme, rosemary sprigs and the olives. Stir. Pressure cook for 15 minutes and then do a 10 slow release.

Serve the chicken cacciatore over mashed potatoes, rice, or for a low carb option, cauliflower rice, cauliflower mash or zoodles. Enjoy!
