Chicken Cauliflower Casserole RecipeIngredients:1 lb. chicken breasts or thighs, organic4 strips of bacon, nitrate free2 cups of cauliflower rice cup celery, super fine dice2 large eggs, beaten1 zucchini, chopped into inch size chunks cup mozzarella cheese, grated cup parmesan cheese grated1 tsp. Rockin Robins Italian seasoning6 Tbsp. heavy whipping cream or whole milk, organicGarlic powderDirections:Preheat oven to 350 degrees F.Pour 1 tsp. Of olive oil in a 9 x 9 baking dish and rub it around the inside of the dish.I butterflied the chicken breast in the video to make cooking it, quick. Then coat both sides of the chicken with olive oil. Season with salt and garlic powder, both sides.Preheat a grill pan over medium heat and lay the chicken in to cook several minutes on each side. The internal temperature should reach 165 degrees F. You can also cut into the chicken to see that no pink is remaining.Once the chicken is done, put it aside on a clean plate to cool 5 minutes and then cut into small bite size pieces.Heat a large frying pan over medium low heat and place the bacon flat in the pan. Cook the bacon, turning frequently until it is crispy brown. Place the cooked bacon on a towel covered plate to drain. Then chop the bacon into small pieces, set aside.In the same frying pan, pour out all but 2 tsp. or so of bacon grease. Add a little olive oil to the pan and then the zucchini and celery. Saute this mixture for 3 - 5 minutes, stirring frequently until softened.Pour the zucchini mixture into the prepared baking dish, along with the chicken, bacon, and Italian seasoning and stir to combine. Add the cauliflower rice and parmesan cheese and toss to combine.Whisk the heavy whipping cream and the egg together in a bowl and then pour this mixture into the casserole, spreading it all around. Stir this very well to combine. Top the casserole with the mozzarella cheese.Bake at 350 degrees F. for 28 to 30 minutes.
