Toasted sesame oil cup coconut aminos3 eggs, pasture raised2 Tbsp. butter, dividedSaltAvocado oilDirections:Place 2 tsp. of avocado oil into a large frying pan over medium high heat. Once the oil is hot, add the chicken, season with salt and stir fry for 4 minutes or until just done. Add a little bit of coconut aminos and stir.Cut into the chicken and when it is no longer pink, place it into a dish to keep warm. Lower the temperature on the pan to medium and whisk the eggs before adding to the pan and season with a touch of salt. Stir and cook these until they are just done and even still a little wet. Place them into the dish with the chicken to keep warm.Turn the temperature to medium high and add a couple of teaspoons of avocado oil to the pan. Once it is hot add the butter and swirl it around until melted. Add the green onion and carrots and stir fry for about 4 minutes.Add the garlic and cook for 1 minute while stirring. Turn up the heat to high and push the veggies to the side of the pan and add 2 tsp. of oil and then 1 Tbsp. of butter. Once melted, add the white rice and stir. Then add the cauliflower rice and stir for 1 minute.Add the coconut aminos and the sesame oil. Stir everything together including the carrots for 1 minute. Then add the chicken and eggs back to the frying pan. Stir until everything is heated through. Add the peas and stir again. Serve once the peas have defrosted.
