Chimichurri Shrimps | Sanjeev Kapoor Khazana

Prawns tossed in freshly made spicy chimichurri sauce. A must try recipe !

CHIMICHURRI SHRIMPS

Ingredients

400 grams shrimps, cleaned
1 tablespoon olive oil
Chimichurri sauce
1 cup fresh coriander leaves
1 cup fresh parsley
3 tablespoons fresh oregano
3-4 garlic cloves
2 tablespoons lemon juice
¼ teaspoon red chilli flakes
Crushed black peppercorns to taste
Salt to taste
2 tablespoons red wine vinegar
½ cup olive oil

Method

1. To make chimichurri sauce, blend together, coriander, parsley, oregano, garlic, lemon juice, red chilli flakes, crushed peppercorns, salt, red wine vinegar, olive oil and blend till well combined.
2. Heat olive oil in a non-stick pan. Add shrimps and cook for four to five minutes or till shrimps are fully done.
3. Stir in the chimichurri sauce and toss to mix
4. Serve immediately.
