Chirer Polao Poha Pulao Bengali Style Poha Sanjeev Kapoor Khazana

CHIRER POLAO

Ingredients

2 cups pressed rice (poha)
2-3 tbsps oil
1 tsp cumin seeds
tsp fennel seeds
2 tbsps raw peanuts
4-5 cashew nuts, halved
2 tbsps raisins
1 medium onion, sliced
6-8 small cauliflower florets
1 medium carrot, peeled and cut into small pieces
1 medium potato, peeled and cut into small pieces
Salt to taste
1 tsp sugar
tsp turmeric powder
1 tbsp ghee
2 tbsps chopped fresh coriander leaves
Fresh coriander sprig for garnish

Method

1. Wash poha and set aside for 10-15 minutes.
2. Heat oil in a nonstick kadai, add cumin seeds once they change colour, add fennel seeds and mix well.
3. Add peanuts and saut for 2minutes. Add cashew nuts, raisins and saut for 2 minutes.
4. Add onion and saut till translucent. Add cauliflower, carrots and potatoes, mix well. Cover and cook for 4-5 minutes on medium heat.
5. Add salt, sugar and turmeric powder and mix well.
6. Add poha and mix well. Sprinkle 2-3 tbsps water, cover and cook for 5-6 minutes.
7. Add ghee, coriander and mix well.
8. Transfer in a serving plate. Garnish with coriander sprig and serve hot.
