CHIRER POLAOIngredients2 cups pressed rice (poha)2-3 tbsps oil1 tsp cumin seeds tsp fennel seeds2 tbsps raw peanuts4-5 cashew nuts, halved2 tbsps raisins1 medium onion, sliced6-8 small cauliflower florets1 medium carrot, peeled and cut into small pieces1 medium potato, peeled and cut into small piecesSalt to taste1 tsp sugar tsp turmeric powder1 tbsp ghee2 tbsps chopped fresh coriander leavesFresh coriander sprig for garnishMethod1. Wash poha and set aside for 10-15 minutes.2. Heat oil in a nonstick kadai, add cumin seeds once they change colour, add fennel seeds and mix well.3. Add peanuts and saut for 2minutes. Add cashew nuts, raisins and saut for 2 minutes.4. Add onion and saut till translucent. Add cauliflower, carrots and potatoes, mix well. Cover and cook for 4-5 minutes on medium heat.5. Add salt, sugar and turmeric powder and mix well.6. Add poha and mix well. Sprinkle 2-3 tbsps water, cover and cook for 5-6 minutes.7. Add ghee, coriander and mix well.8. Transfer in a serving plate.
