Chocolate Banana Oat Bars Recipe With Seeds Must Try Healthy Snack!

This chocolate banana oat bars recipe with seeds is a great healthy breakfast on the go or snack. This oats recipe is also a great way to use up ripe bananas (or overripe bananas). They're sugar free and, have no processed oils, no processed grains and also have lots of great satiating fats from nuts and seeds. Plus they're so easy to make, here's how.

Ingredients
2.5 cups rolled oats (gluten free if required)
1/4 cup mixed seeds
cup slivered almonds or pine nuts
1/3 cup raisins (no added sugar)
1T ground flaxseed
1.2t cinnamon
cup coconut oil
cup rice syrup
2 ripe bananas, mashed (about 250g)
1 egg (vegan: sub 1 flax egg)
45g Lilys naturally sweetened chocolate chips (or unsweetened)
Directions:
preheat oven to 350F/180C. Line an 8x8 or 9x9 pan with parchment paper, letting it overhang on 2 sides for easy removal of the bars later. Combine oats, seeds, almonds, raisins, ground flaxseed and cinnamon in a large bowl and stir to combine. Combine coconut oil and rice syrup in a microwave safe container and melt in microwave for about a minute. Let cool for 2 minutes (so that you dont cook the egg in the next step!). Mash the bananas, then combine with the egg. Next pour the coconut oil and rice syrup into the banana and egg mixture and stir to combine. Then make a well in the middle of the dry ingredients and pour the wet ingredients into the well. Stir thoroughly until you see everything is moistened. Transfer the mixture to your lined baking pan and spread it evenly and flatten it. Bake for about 35 minutes, until slightly golden brown and firm to the touch. Take out of the oven and cool completely on wire rack. After cooling, melt the chocolate in a double boiler, or in a microwave for 30 seconds at a time stirring after each time until just melted. Drizzle melted chocolate over the top of the squares, then cut big square into 9 equal squares, then cut each of those in half into triangles.

These will taste even better on day 2 after all the liquid has had time to fully absorb into the oats, ground flax and chia seeds (if you used chia in your seed mix like I did). Store in an airtight container in the fridge for up to about a week (if they last that long!)
