Chocolate Kulfi Bar | Cooking Classy with Afraz | Sanjeev Kapoor Khazana

CHOCOLATE KULFI BAR

Ingredients

1½ cups chopped dark chocolate
1½ liters milk
¼ cup castor sugar
¼ cup chopped cocoa butter
Finely chopped hazelnuts for sprinkling

Method

1. Heat milk in a deep non-tick pan and bring to boil on medium heat. Reduce heat and cook till reduced, stirring occasionally.
2. Add castor sugar, mix and cook till it melts. Reduce heat and cook till the mixture thickens. Switch off heat and bring down to room temperature.
3. Grind the reduced milk mixture into fine mixture.
4. Fill individual kulfi moulds with ground mixture, tap, cover and freeze for 7-8 hours.
5. Take dark chocolate in a microwave proof bowl. Add cocoa butter and melt in the microwave for 1 minute. Remove from microwave and mix till chocolate melts and bring down to room temperature.
6. Rub the kulfi moulds against your palms. Insert a candy stick in the center and demould.
7. Coat each kulfi with melted chocolate mixture and sprinkle some hazelnut on all sides. Again coat with some melted chocolate mixture and place on a plate. Freeze for 5 minutes or till chocolate sets.
8. Serve chilled.
