In part 1 of our Chocolate Mayonnaise Cake Recipe saga - Glen makes a contemporary take on the classic chocolate mayonnaise cake recipe... So many people credit this cake to Hellmanns mayonnaise, and call it the Hellmann's mayonnaise cake. We'll be dissecting the myth around this chocolate mayo cake in future episodes of the old cookbook show.Ingredients:3eggs400 mL (1)cupspacked brown sugar10 mL (2tsp)vanilla extract250 mL (1cup)mayonnaise500 mL (2cups)all-purpose flour150 mL (cup)unsweetened cocoa5 mL (1tsp)baking soda2 mL ( tsp)baking powder1 ml (tsp)salt2 mL ( tsp)chili powder, optional2 mL ( tsp) cinnamon, optional250 mL (1cup) buttermilk, or milk, or water75 mL (1/3 cup) hot coffee250 mL (1 cup) chocolate chips, optional)Method:Preheat oven to 180C (350F). Grease a 13x9 pan. Beat eggs, sugar, and vanilla at medium-high speed, until mixture is light and fluffy.Add mayonnaise, and beat at low speed until combined. Whisk together flour, cocoa, baking soda, baking powder, salt, chili powder, and cinnamon. Add flour mixture to egg mixture alternately with milk and coffee. Pour batter into prepared pan. Bake at 350 for 30 to 35 minutes or until a cake tester comes out clean. Cool completely on a wire rack before frosting. Spread Chocolate-Cream Cheese Frosting on cake.Frosting:Ingredients1(8-oz.) package cream cheese, softened125 mL (cup)butter, softened10 mL (2tsp)vanilla extract1- 1Kg (32-oz.) package icing sugar125 mL (cup)unsweetened cocoa60 - 125 mL ( cup - cup) 35% whipping creamMethod:Beat butter, cream cheese, and vanilla until light and fluffy. Whisk together icing sugar and cocoa in a medium bowl; gradually add to butter mixture alternately with whipping cream. Beat at low speed until blended after each addition.
