Hope you give it a try!Chocolate Tahini Cupcakes or MuffinsIngredients:2 eggs1 cup Tahini2 very ripe bananas cup almond milk2 Tbsp. honey cup cocoa powder1 tsp. Baking powder tsp baking sodaPinch of saltDirections:Preheat oven 350 degrees F.In a bowl, add the bananas and mash them until smooth. Then add the tahini (make sure you stir it before adding), the honey, almond milk and the eggs. I cracked the eggs in a small bowl first to make sure no shells got into it and then I whisked the eggs with a fork.Stir to combine. Once combined add the cocoa, baking powder, baking soda, and a pinch of salt.Stir to combine all the ingredients. Then spoon the batter into cupcake holders about full. These will puff up when cooking but then deflate as they cool. Bake 12 to 16 minutes. You want the tops of the cupcakes to almost set. Do not overbake. It would be best to under bake a bit to prevent them from becoming dry.
