CHOCOLATE TRUFFLES RECIPE - Valentine's Day Special

In this episode, I'd like to share with you, 'Chocolate Truffles' recipe. These little balls are simple to make and so delicious. I use dark chocolate and a few ingredients that pairs well with it, in my opinion. But feel free to use any chocolate or flavor that you like, in the same measurements. Also, you can give homemade truffles to your loved ones; in a box, plate or bowl.

INGREDIENTS
300 gr. (10.58 oz) good quality dark chocolate (broken into pieces)
300 ml. (1 1/4 cup) cream
50 gr. (1/4 cup) butter
Zest of an orange
2 tbsp orange juice
1 tsp instant caffee
A pinch of salt
1/4 cup hazelnuts (optional)

TO ROLL TRUFFLES IN
Finely chopped or ground nuts (Pistachio, hazelnut, walnut)
Coconut flakes
Cocoa powder

DIRECTIONS
If using hazelnuts, toast them in a saucepan over medium low heat for about 3-4 minutes, stirring constanly.
Transfer nuts into a bowl, let the pan cool.
Heat the butter and cream until nearly boiling, over medium low heat.
Turn off the heat, when tiny bubbles appear around the edges of the pan.
Add instant coffee and a pinch of salt, mix.
Add zest of an orange, making sure not to get bitter white part under the zest.
Add 2 tbsp orange juice.
Then add the chocolate and mix well until melted.
Transfer mixture into a bowl, let cool for about 10 minutes.
Refrigerate for at least 8 hours or overnight.
To form truffles, lightly oil your very clean hands with some flavorless oil, such as sunflower.
Using a tea spoon, scoop out a small ball and roll.
Totally optional but, place a whole roasted hazelnut in the middle, if desired.
Roll again into a ball, and place on parchment paper.
Repeat the same with the remaining mixture.
Then roll balls in nuts, coconut flakes or cocoa, until completely covered.
If your truffles are not firm enough to roll in nuts, you can refrigerate them to harden.
Once done, store in the fridge and enjoy!
These 'Chocolate Truffles' are amazingly delicious and gets better the longer they sit in the fridge.
They will keep, refrigerated, for up to a week.
