This recipe for English muffins is, according to Christina Tosi herself, "tried and true, and easily one of my favorites." These muffins will definitely take your breakfast to the next level!

INGREDIENTS
2 1/3 tablespoons active dry yeast (a little less than the contents of two 1/4 oz packets)
1/4 cup lukewarm water
1 3/4 cups buttermilk
4 cups bread flour, plus more as needed
1/4 cup sugar
1 2/3 tablespoons kosher salt
5 tablespoons unsalted butter, at room temperature
Nonstick vegetable spray
Cornmeal as needed (or yellow grits, in a pinch)
