Give this Ragu Bolognese Ricetta Tradizionale a try.Ingredients:2 Tbsp olive oil2 medium onions, finely diced4 celery ribs, finely diced2 medium carrots, finely diced500g (1 pound) medium ground beef500g (1 pound) medium ground pork Salt to tastePepper to taste250 mL (1 cup) dry white wineGrated nutmeg250 mL (1 cup) full fat milk185 mL (6-ounce) can tomato paste250 mL (1 cup) water or chicken stock, as needed Method:Heat oil in a heavy stock pot over med-high heatSweat onions, celery, and carrot, until softened but not browned.Add beef, and pork and cook breaking up chunks, until no longer pink.Season with salt and pepper.Add wine and reduce by ⅔.Grate in some nutmeg.Stir in tomato paste, and milk; cover and gently simmer, for 2-3 hours.
